Waldorf Salad:
Apple, diced
Walnuts, chopped
Celery, chopped
Lemon Yogurt
Lemon Zest
Cinnamon (i used siagon cinnamon)
Nutmeg

Beet Salad:
Mixed Greens
Beets (roasted, or canned)
Cheese (blue, gorgonzola, feta, or goat cheese)
Walnuts, chopped (I candied mine by roasting them in a pan with a little sugar.)
Serve with balsamic vinegar

Kona Grill Salmon
INGREDIENTS
4- 8 ounce filets of fresh salmon        
1/4 cup Soy Sauce
1/2 pound Brown Sugar
1/2 Tbl Minced Garlic
1/2 Tbl Minced Ginger
1/4 Bunch Chopped Cilantro
Salt and Pepper to taste
  • Salt and pepper the salmon filets and Grill to desired temperature.
  • In a mixing bowl combine all other ingredients and mix well until all brown sugar has been dissolved.
  • Transfer the mixture from the bowl into a sauté pan and heat the sauce to a simmer.
  • Once the salmon is done cooking apply the sauce in the pan to both sides.
  • Serve with your favorite side dishes.

Shannon's Feb 2011

Shannon was so sweet to pull out the fine china and crystal. What a treat!!!!!





Delicious dinner of Soup, salad, homemade bread and jam MMMmmm

WHEAT BREAD
5 to 5 1/2 cups of hot tap water
2/3 cup oil
1/3 to 2/3 cup of honey
1 Tbsp of salt

Mix in machine

Add 4-5 cups of flour. Mix.

Add 3 Tbsp SAF yeast (this is a must don't substitute, in fact this is the only yeast I use, it is full proof). Mix.

Continue mixing until adding 1 to 1/2 cups at a time until dough pulls away from the side of the bowl. AFter this has happening I will add about 1 cup of flour and then let the machine run for 5 minutes just kneading the dough. Total flour used is like 12 to 14 cups. Let raise for 45 mins (SAF yeast tends to raise faster than regular yeast) and then punch down shape into loaves let rise 30 mins and then bake in oven at 350 degrees for 25-30 mins. Makes four large loaves.


WHITE BREAD
4 cups warm water
2 T yeast
4 T sugar
Mix and let proof
4 tsp salt
4 T oil
9 to 9 1/2 cups flour
Add salt and oil. Mix in 5 cups flour with mixer. Add remaining flour and mix in with a big spoon. Knead in bowl for 5 minutes. Let raise 1 hour or until double in size. Punch down and form into loaves. Put into greased loaf pans. Let raise about 45 minutes put into cold oven. Turn oven to 350 degrees and cook for 30 to 35 minutes.
Makes 4 normal size loafs.
